How Neera Is Collected: Then and Now

Neera begins as a clear, sweet sap that flows from the unopened inflorescence (flower) of the coconut or palmyra palm. But between the moment it’s tapped and the moment it’s consumed, lies a race against time—because Neera ferments rapidly, especially in warm climates. Over the years, tapping communities have developed methods to collect and stabilize it—ranging from earthen pots and lime coatings to modern robotic devices and cold-chain logistics.

 Traditional Collection Methods
  • Tappers climb the palm before sunrise using ropes or harnesses.
  • The unopened flower (spadix) is slightly shaved and a sterilized pot is tied below it.
  • Some tappers coat the inside of pots with lime or turmeric to slow fermentation.
  • The sap is collected after 6–8 hours, and either:
    • Consumed immediately
    • Boiled into jaggery or syrup
    • Fermented into toddy if left untreated

In most traditional settings, fresh Neera is only viable for a few hours unless cooled or processed.
